The taste and complexity of flavours derived from honey are immeasurable. 
Try my proven yummy Traditional II Mead recipe and then experiment with adding fruit, herbs or spices!
Most importantly with Mead is to get a great basic recipe to build upon to your own taste!

The recipes increase in detail and information with the newer recipes having improved layout and function hopefully simplifying things.
The difficulty rating is either straightforward/modest/involved
